Last December 20, 2024, DHEEd’s Asst. Prof. Ma. Afrecita D. Nieva, MBA was a guest speaker for DZUP Balita on the topic of Food Preparations for the Upcoming Christmas Season, sharing her essential tips on food safety, managing food waste, and balancing healthier options without losing the holiday spirit.
In this 15-minute featured segment on DZUP Balita, Asst. Prof. Nieva sheds light on a few tips and tricks to make Christmas meal preparation easier on the labor and without those big expenses. She first brought up the importance of food safety when preparing the meals, expressing that regardless of the size of the meal, food safety and sanitation take utmost priority. Her tips included washing hands & utensils, a primary step to sanitation, before then going to explain how to separate ingredients according to how they are prepared (e.g. meats & protein from fresh produce).
Her sharing also highlighted how one can practice being conscientious when preparing food from scratch or even buying it off the rack from one’s local supermarket. Prof. Nieva goes into detail about the different food alternatives people can buy from the store or make at home in an effort to include friends and family with dietary restrictions. For example, vegan, vegetarian, and gluten-free eaters may enjoy a simple vegetable salad which can be made by cutting greens and buying or making favorite dressing.
Lastly, she addressed every Filipino family’s dilemma in managing food waste with a simple habit we have commonly practiced: using leftovers for our next meal. Christmas ham can be incorporated into fried rice or macaroni salad, lechon manok can be an ingredient for macaroni soup, and so on. Prof. Nieva stressed the importance of having creativity in the kitchen—that leftovers need not feel repetitive if one can be creative with how they concoct their next meal with their leftovers.
Her final words shared that Christmas meals need not be expensive or tedious to prepare. We should only simply think about what is enjoyed by everyone. When the favorite food of the family is served despite its limited budget, it is sure to be a memorable Christmas for everyone.
